    Raspberry Virgin Mojito Recipe - Easy Mocktail

    There is nothing like a good, flavorful mojito mocktail. However, regular mojitos made with just mint can be a little boring. Why not liven it up with a little raspberry? Fruity raspberries and fresh, powerful mint are the perfect combination which makes this mojito one you are going to love.

    Making a raspberry mint mojito mocktail is actually very easy. It all starts by making a mint flavored syrup. A little sugar, a little water and some fresh, packed mint are boiled together and then strained, leaving behind a sweet, minty syrup.

    Really press the liquid out of the mint leaves so that all the juice comes out- that is where the flavor lives! Once cooled that flavor packed syrup is ready to use!

    We like to mash the raspberries with brown sugar rather than white to give the drink a richer taste. You will notice that molasses sweetness when you take your first sip! The mashed berries and sugar is mixed with the mint syrup and then the whole drink is topped off with some bubbly seltzer.

    No alcohol needed in this amazing drink! It is flavorful and drool-worth as is! Be sure to garnish your glass with a fresh raspberry or mint leaf to make it look like picture perfect.

    Refreshing raspberry and mint are sure to make you smile!

    Ingredients

    • ½ cup fresh packed mint leaves

    • 1 cup white sugar

    • 1 cup water

    • 1 cup fresh raspberries

    • 1 tsp brown sugar

    • ½ cup lime juice

    • 24 ounces seltzer

    • Ice

    • Fresh mint for garnish

    Directions

    • In a small saucepan, combine the ½ cup mint leaves, 1 cup white sugar and water. Bring the mix to a boil over medium heat. Stir to dissolve the sugar and boil for 5 minutes.
    • Remove the pan from the stove then strain, removing the mint from the syrup. Be sure to press the mint leaves into the strainer to help release some of their juices. Discard the mint.
    • In a small bowl, mash the raspberries with the brown sugar then divide the raspberry mash between 4 glasses.
    • Add 2 tablespoons of the mint syrup to each glass.
    • Add 2 tablespoons of lime juice to each glass.
    • Fill each glass with ice and then top with the seltzer. Stir briefly and then garnish each glass with a mint leaf.

    Tips and Tricks

    • • You can make the mint syrup in advance and store it in the fridge. It will keep for about a month.
      • If you can’t find fresh raspberries, frozen, thawed berries will work, too.

      • Muddler or masher
