Mint- Fresh mint leaves are a requirement for a mojito. The vibrant flavor of mint is necessary. Be sure to muddle the mint well in order to get all the oils out of the leaves.
Brown Sugar- Brown Sugar adds a rich sweetness that we love. Use regular white sugar if needed. Low carb sweeteners, like erythritol, will work as well.
Lime Juice- Fresh lime juice brings our passion fruit mocktail to life!
White Grape Juice- White grape juice adds a subtle flavor and sweetness to the drink.

Tropical fruit, tangy lime juice and fresh mint make quite a powerful drink!

Ingredients

4 fresh passion fruits
¼ cup mint leaves
5 Tbsp brown sugar
½ cup fresh lime juice
½ cup white grape juice
Ice
Club Soda

Directions

Cut each passion fruit in half and then push the fruit through a fine mesh strainer. The juice should flow out into the bowl below the strainer and the seeds should remain in the strainer. Press the pulp as hard as you can to get the most fresh juice from each passionfruit. Save some of the seeds in a small bowl to use later.
In a cocktail shaker, muddle the mint leaves and brown sugar.
Add the grape juice and lime juice to the shaker.
Fill the shaker with ice, cover and shake vigorously for about 20 seconds.
Add ice to four glasses and strain the grape lime mix into each glass.
Pour the passion fruit juice into each glass, filling the glasses about ¾ of the way to the top.
Top the drink with the club soda.
Float a few of the reserved passion fruit seeds in each glass then enjoy!
