    Bubble tea is a very fun drink. We all know this is true. Yet even the most fun bubble tea needs a little extra excitement every now and then. That is why we created this delicious, unexpected lychee bubble tea recipe. It is fruity, refreshing and has a delightful tropical taste that you will adore.

    What is Bubble Tea?

    Bubble tea is an iced tea that has large tapioca pearls in the bottom of the cup. Bubble tea is often made with milk and a sweetener. Bubble tea originate in Taiwan in the 1980’s. It comes in all kinds of flavors and colors, making it the perfect drink to enjoy anytime of year.

    How to Make Bubble Tea

    Bubble tea is pretty easy to make. All you need are the right ingredients! Any kind of brewed tea will work to make bubble tea however black tea or green tea are the most commonly used. You can choose a decaf tea if you’d like an un-caffeinated version.

    Making the tapioca pearls is the first step toward creating this lychee bubble tea recipe. To make tapioca pearls for bubble tea, all you need to do is:

    • 1. Boil water
    • 2. Add the dried tapioca pearls
    • 3. Simmer the tapioca pearls for about 12-15 minutes. Your package instructions will show you exactly how long to cook the pearls.
    • 4. Strain and discard the cooking water then toss the tapioca pearls in a little cold clean water or flavored sugar syrup.

    Tapioca pearls are definitely best when made fresh. You can store the cooked boba pearls in the fridge for about three days however, any longer than that and they get dried out. It’s a good thing they are pretty easy and quick to make! You can whip up a batch anytime you are craving tea.

    How to Make Bubble Tea

    Lychee Syrup vs Fresh Lychee

    To make our lychee bubble tea, we use lychee syrup as a flavoring. You can find lychee syrup in specialty coffee shops or just buy some online. All the major coffee syrup brands should have a lychee flavor. Using syrup is the easiest way to not only flavor your bubble tea but also to sweetened it.

    Fresh Lychee

    You can use fresh lychee if you have it on hand. Remove the skin from the ripe lychee and place the soft fruit into a blender to puree it. Add the lychee puree to the bubble tea. About ½ cup of lychee puree will work in place of ¼ cup syrup.

    If you use lychee puree, you may want to add a little honey or sugar to your bubble tea. Two tablespoons of your favorite sweetener will work to make your tea perfectly sweet.

    Ingredients

    • ⅓ cup black tapioca pearls, uncooked (boba)

    • 1 ½ cups water

    • 2 cups brewed green tea

    • ¼ cup lychee syrup

    • 1 cup coconut milk

    Directions

    • Place the water in a small saucepan and bring to a boil.
    • Add the tapioca pearls to the boiling water and cook according to the tapioca pearl package directions. It will be about 12-15 minutes to cook the tapioca but check your specific package directions for best results.
    • Strain the boba and discard the water.
    • Pour the boba into a small bowl and gently stir in the lychee syrup. This will prevent the boba from sticking together as it cools and also allow them to soak in some of the lychee flavor.
    • Brew the green tea and let it cool.
    • Stir the coconut milk into the cooled green tea.
    • Scoop the lychee tapioca pearls into two glasses. Pour in the green tea milk and add a few ice cubes to each glass.
    • Serve cold with a large straw.

    Tips and Tricks

    • • We like black tapioca pearls for this recipe but white boba will also work.
      • Boba pearls are best when made fresh. They will only keep for about 2-3 days when stored in the fridge. Make the boba for the tea right before you intend to make the tea for the best results.
