    Barley is boiled with water and then the water is then strained and the grains are discarded. What is left is a foggy, delicious water that has huge health benefits. Barley water has been made around the world for decades. Many countries and cultures enjoy barley water to stay healthy and hydrated.

    Adding lemon to the barley water just increases the health benefits. Lemon is full of vitamin C and fiber. It is a natural antioxidant and antimicrobial. Lemon also tastes delicious!     How to Make Barley Water

    Making barley water is actually pretty simple. Here is a quick look at how we make this delicious, amazing drink.

    1. Add the barley and water to a large bowl and let the grains soak overnight.
    2. Strain the barley and discard the soaking water. This helps clean and soften the grains.
    3. Add the water in the recipe to a large pot along with the soaked barley then bring the mix to a boil. Simmer the barley for 30 minutes.
    4. Add the lemon juice and lemon peel to a large pitcher.
    5. Strain the hot barley water into the pitcher, adding the barley water to the fresh lemon juice but discarding the cooked grains.
    6. Add the honey to the water and stir well.
    7. Chill the barley water or enjoy it warm.

    Homemade barley water is delicious served warm as a tea or over ice in the summer. The health benefits are incredible either way!

    Storing Homemade Lemon Barley Water

    Barley water needs to be stored in the fridge. We like to store our lemon and barley water in a large glass pitcher so it is easy to grab and pour. You can also pour the barley water into individual pint size mason jars. Anytime you want a glass, just grab a pre-portioned jar from the fridge and enjoy!

    Homemade barley water stays fresh for up to three days. After this, you may notice the barley water starts to smell funny or get a skin on the surface of the water. This means it is time to discard it and start a new batch. However, if you add barley water to your daily routine, you will never have the problem of it going bad!

    Ingredients

    • 8 cups water plus extra for soaking

    • 1 cup hulled barley

    • 2 lemons

    • ¼ cup honey

    Directions

    • Place the barley in a large bowl and cover with water. Cover the bowl and let the barley soak overnight.
    • Strain the barley and discard the soaking water.
    • Place the eight cups of water and barley in a large saucepan. Cover the pan and bring to a boil over high heat. Lower the heat and let the barley simmer for 30 minutes.
    • While the barley is boiling, peel the lemons, making sure to only peel off the yellow part, leaving the white behind. Place the yellow lemon peel in a large pitcher.
    • Juice the peeled lemon and discard the seeds. Add the fresh lemon juice to the pitcher with the lemon peel.
    • Strain the barley water into the pitcher. Discard the barley.
    • Add the honey to the pitcher and stir to dissolve.

    Tips and Tricks

    • • Keep the barley water unsweetened to reduce the sugar levels in the drink, making it even more nutritious
    • • Barley water will only keep for about a week in the fridge so be sure to drink it soon after you make it. When the surface starts to look a little slimy, it is time to discard and make a new batch!
