Coconut water has come and gone, electrolyte water is pretty popular and some of us may even remember black water that was made with alkaline to help boost the immune system. But have you ever heard of barley water? Well, get ready to fall in love with a whole new kind of water. One that is very healthy, tastes almost like tea and will probably be gaining in popularity very soon.

Barley water has a whole list of impressive health benefits. For one, it has been shown to lower cholesterol. Barley water not only suppress LDL cholesterol but also helps cut down on your oxidative stress by eliminating free radicals in your body. So this barley water recipe is ideal for anyone struggling with high cholesterol or heart issues in general. Barley water also controls blood sugar levels and can even lower blood sugar after eating. Studies have shown that diabetics who drink barley water with meals have less of a spike in their blood sugar.

So barley water is clearly healthy, but does it taste good? It sure does! Our honey lemon barley water tastes a lot like tea. In fact, you can enjoy it either cold over ice or hot just like tea. Give this incredibly health, tea-like drink a try and we know you will feel good!


  • 8 cups water plus extra for soaking

  • 1 cup hulled barley

  • 2 lemons

  • ¼ cup honey


  • Place the barley in a large bowl and cover with water. Cover the bowl and let the barley soak overnight.
  • Strain the barley and discard the soaking water.
  • Place the eight cups of water and barley in a large saucepan. Cover the pan and bring to a boil over high heat. Lower the heat and let the barley simmer for 30 minutes.
  • While the barley is boiling, peel the lemons, making sure to only peel off the yellow part, leaving the white behind. Place the yellow lemon peel in a large pitcher.
  • Juice the peeled lemon and discard the seeds. Add the fresh lemon juice to the pitcher with the lemon peel.
  • Strain the barley water into the pitcher. Discard the barley.
  • Add the honey to the pitcher and stir to dissolve.

Tips and Tricks

  • • Keep the barley water unsweetened to reduce the sugar levels in the drink, making it even more nutritious
    • Barley water will only keep for about a week in the fridge so be sure to drink it soon after you make it. When the surface starts to look a little slimy, it is time to discard and make a new batch!
