We are definitely coconut lovers and we wanted to create a smoothie that captured the rich, creamy, tropical taste of coconut. That is exactly what you will get in this recipe!
So many coconut smoothie recipes out there are also made with other, extra ingredients. Banana is often tossed into the blender or pineapple chunks are added in. While those extra ingredients all sound great, they can take away from the taste of the coconut.
Coconut isn’t a very powerful flavor on it’s own and it can get easily hidden when paired with other, stronger ingredients. We don’t want the coconut to be hidden. We want it to shine through! So forget all those “other” flavors. Everything in this smoothie must be coconut!
We start our recipe with unsweetened coconut milk. This is the kind that you can find in the refrigerated section of the grocery store. We like this type because it is not overly sweet and still has a nice coconut taste. It is also slightly thinner and has less calories than canned coconut milk. Stick to the unsweetened, plain coconut milk to get the best flavor.
We use cream of coconut as the sweetener in our coconut smoothie. Cream of coconut is extremely rich and sweet. Cream of coconut is made by chilling coconut milk then scraping off the top layer of fatty cream.
That fatty cream is what goes into the cream of coconut can. It is insanely rich but ohhhhh sooooo good. It is the perfect way to pack more coconut taste into our smoothie and also to sweeten it in a natural way.
Real coconut chunks have to go into out smoothie mix! You can typically find coconut chunks in the frozen fruit section of the grocery store. If you find the, stock up! You will be making this smoothie a lot so you will want to have coconut on hand.
You can also use fresh coconut chunks which can sometimes be found for sale near the grocery store fruit. Whole coconuts are perfect for peeling, chopping and enjoying too! Any chopped coconut will work for our smoothie!
Using frozen coconut chunks gives the smoothie a cold, thick texture. If you opt to use fresh coconut, you may want to throw a handful of ice into the blender as well. Ice will make the coconut smoothie cold, refreshing and the perfect texture.
You can also try freezing the coconut milk in an ice cube tray and popping the frozen cubes into the blender. This is another tasty way to get that cold smoothie you crave.
