    When the weather starts to get hot, you will need a refreshing drink to help cool you down. This blueberry ginger refresher is the perfect thing to try! The fresh blueberry flavor goes so well with the zesty ginger that you will want to have cup after cup.

    This recipe makes enough for about 6 big glasses of a blueberry refresher so you will have plenty on hand to keep your craving satisfied!

    That is one thing that we absolutely love about this recipe too- you can totally make it ahead so you can enjoy it anytime. Make the blueberry ginger syrup, strain it and then keep it in the fridge. Anytime you want a glass of refresher, simply measure the syrup into a glass and add a seltzer.

    Easy as that! It is also a great drink to make for a party. You can pour the syrup into a large pitcher of ice, add the seltzer and put it on the drink table for everyone to serve themselves. It is sure to be a hit.

    If you don’t have any fresh blueberries, frozen blueberries will work as well. You can also try to switch up the recipe by using a different flavor of seltzer.

    Orange seltzer would be great and mango seltzer would definitely make this drink even more tropical. No matter what you choose, it will surely be fantastic!

    Sweet blueberries and fresh ginger pair perfectly in this sparkly drink!

    Ingredients

    • 4 cups water

    • 1 ½ cups fresh blueberries

    • 1 Tbsp fresh grated ginger

    • 4 Tbsp powdered sugar

    • 5 cups lemon lime seltzer

    • Ice cubes

    • Fresh mint leaves

    Directions

    • Place the water, blueberries and fresh ginger in a small pot and bring to a boil over medium high heat.
    • Add the sugar to the pot and stir to dissolve.
    • Lower the heat so the mix is just barely simmering.
    • Use the back of a rubber spatula to mash the blueberries.
    • Simmer the mix for about 15 minutes then remove the pot from the heat and set it aside to cool.
    • Once cooled, strain the blueberry syrup into a bowl. Press the blueberries into the strainer to get as much juice as possible out of them.
    • Fill your glasses with ice and then add about ⅔ cup blueberry ginger syrup to each glass. Top with the lemon lime seltzer and garnish with a fresh mint leaf. Enjoy!

    • • Let the blueberry ginger syrup cool in the fridge overnight before straining it. This will allow even more flavor to develop in the syrup and give your drink a stronger flavor.
      • You can replace the powdered sugar with powdered erythritol for a low carb version of the drink.
